We will need the following ingredients:
For the test
- Milk - 250 milliliters
- Flour - 450 grams
- Sugar - 2 tablespoons
- Yeast - 20 grams
- Egg - 2 pieces
- Water - 125 milliliters
- Vegetable oil - 2 tablespoons
For filling
- Eggs - 3 pieces
- Green onions and dill - 1 small bunch each.
Cooking process:
1. Spread the yeast. Pour a glass of milk into a deep bowl. This is approximately 250 ml. Mix with water. Stir thoroughly until the yeast is completely dissolved.
Milk and water must be warm for bacteria to start playing. Can be heated over a fire in a saucepan or in the microwave.
2. Once the yeast is diluted, add two eggs, sugar and salt. Whisk.
3. Now sift the flour. Add a little bit. Sifted some of the flour and mixed.
4. Once a little more than half of the flour has been added, add vegetable oil. The dough is just semi-liquid, so the oil will easily mix with it. Knead the dough further. It should turn out soft. Then cover with a towel and place in a warm place for about 40 minutes.
By adding flour in parts, you control the thickness of the dough. If it turns out too thick, the pies will be dense, hard and not very tasty.
5. Meanwhile, send three hard-boiled eggs. Chop green onions.
6. Place the onion in a frying pan. There is no need to fry it, just simmer it a little. It should turn out as shown in the picture. The onions became a little smaller and neither raw nor fried.
7. Finely chop the boiled eggs, as well as the dill. Add to the onion. Salt and pepper to taste. Mix everything.
8. After 30 minutes our dough has risen. We knead it and wait for it to come again.
9. The dough has risen. Lubricate your hands with sunflower oil and start making flatbreads.

Now let's try cooking this way at home. The cooking process is practically the same. The only difference is that we bake the pies in the oven. And before baking, they are brushed with egg yolk, so they still differ in appearance from fried ones. You will learn how to cook baked pies without any difficulty.
Products we will need:
For the test
- Flour - 850 grams
- Kefir - 0.5 milliliters
- Sugar - 2 tablespoons
- Salt - 1 teaspoon
- Dry yeast - 1 pack (12 grams)
- Vegetable oil - 1/3 cup
For filling:
- Green onions - 200 grams
- Chicken egg - 8-9 pieces
- Ground black pepper - 1/3 teaspoon
- Salt - 1/2 teaspoon
- Butter - 50 grams
Preparing the pies:
1. Pour kefir into a deep bowl. It should be at room temperature, in other words warm. It is better not to heat kefir so that it does not curdle. Just take it out of the refrigerator early.
If you do not have kefir available, you can use milk, whey, or water instead.
Pour the yeast, spreading it over the surface. One such pack is designed for 1 kilogram of flour. Leave them for some time to get wet.
If you have fresh raw yeast, then send 30 grams.
2. At this time, sift the flour. We take approximately 1 kilogram. Why kilogram? Because flour has different viscosity, so the dough turns out differently each time.
It is necessary to sift, this way the dough will turn out fluffier. As if saturated with oxygen.
3. Now add sugar and salt to kefir and yeast. Stir.
4. Next, add flour, but not all at once. As I said before, it may take less. Gently knead the dough. First with a spoon. This dough turns out light and airy. Products made from it do not go stale for a long time. And it's universal. Suitable with both regular and sweet fillings. You can also bake buns, loaves, and bread.
Gradually we form a kind of lump. The dough begins to peel away from the walls. It’s already a little difficult to interfere. You can now easily knead with your hands.
5. Add more flour and continue kneading with your hands. Transfer to the table and continue the process.
6. As the dough begins to stick to your hands, spread sunflower oil over the surface. It turns out somewhere from 2-3 tablespoons to 1/3 cup. Maybe even half a glass. I put it on my eye. It always turns out differently. We continue to knead.
The more we knead it, the softer and tastier it will be.
If the dough seems a bit runny, add more flour and continue kneading. The main thing is not to overdo it. Hard dough is also bad.
7. If you take one end of the dough and lift it, it will not hold. It will tear. This is how it should turn out for you.
8. Now put the dough either in a regular bag or in a deep bowl. Cover the top with a napkin or towel. And leave in a warm place for at least an hour. If the yeast is not very active, it may take two hours. Maybe three.
Preparing the filling
9. While the dough is rising, start filling. Let's cook the eggs. Wash the greens and let them dry on a towel. Chop the greens.
10. To make the filling juicier, you need to add butter to it. Because the pies will be baked, so you need to make it juicier. If they had fried it, there would have been no need for it. Melt the butter in the microwave for 20-30 seconds or in a frying pan. We send it to the filling. Salt and pepper.
We clean the eggs and cut them finely. And we also add it to the filling. Mix everything well.
11. One hour passed while we were preparing the filling. Our dough has almost quadrupled in size. It turned out magnificent.
Shaping future pies
12. Sprinkle flour on the table. We dump out our dough. And lightly roll it in flour.
13. Now we pinch off small egg-sized pieces from it. In this way we divide all the dough.
14. Grease a baking sheet with sunflower oil. We begin to stick the pies. Let's put a lump. Roll it in flour. And roll it out slightly. Under no circumstances should you press too hard. There is no need to make a thin pancake out of it.
The harder we press on the dough, the tougher the pie will be. It is necessary that air bubbles remain in the dough.
We put a little filling on the flatbread and stick the opposite ends together, like a dumpling. Turn the pie upside down and place it on a baking sheet so that there is at least 1 centimeter between the pies. During baking they will increase in size and may stick together.
If you decide to fry in a pan, do not put it in right away. The pies need to rest. It turns out that the dough fits three times: the first time in a bowl, the second time when we roll the balls. This is the third time the pies have been made.
When you make it with kefir, you get double fermentation. Not only yeast, but also lactic acid. Kefir is essentially a leaven. Some products can be prepared only with kefir, without adding yeast.
Now cover the baking sheet with the pies with a napkin and leave them for 10-15 minutes.
15. Now they need to be lubricated. Take two eggs and beat lightly. Using a pastry brush, thoroughly grease each pie. Let's give them one more minute. Place them in a preheated oven at approximately 220 degrees. I have a divided oven. The maximum is five, that’s where the arrow stands. Bake for about 20-25 minutes. - Sour cream - 2 tbsp.

8. Pour just a little flour onto the table and lay out the dough. Let's mix it in just a little. When you place the dough on the table, pay attention to how porous the dough is.
9. Cover with a towel and let the dough rest for 10-15 minutes. Our dough is ready. We can start baking pies.

1. Boil the eggs for at least 7-8 minutes. Cool in cold water or under running cold water, peel and cut into arbitrary pieces.
2. Add boiled rice to the eggs, you can take white or steamed rice, in principle, any rice, but it must be boiled until fully cooked so that there are no hard grains. We also add cilantro, parsley and green onions. Add greens to taste. Not everyone loves parsley or cilantro. A lot of onions are a must.
3. Salt, pepper and add melted butter. This can be either melted butter or butter melted in a frying pan. Mix everything thoroughly.

- Flour - 7 cups
- Vegetable oil - 1 cup (3/4 +1/4)

- Hard-boiled eggs - 10 pcs.
- Boiled rice - 1 cup
- Butter or ghee - 70-100g.
- Green onions - 2 bunches
- Parsley, cilantro
- Salt pepper

Preparation:
1. Prepare potato broth. Peel the potatoes, wash them, cut them into small pieces and boil them in 500 g of water. When the potatoes are ready, they should boil a little, cool them along with the broth and grind them in a blender until smooth. If you don’t have a blender, grind everything with a masher, which you usually use to make mashed potatoes.
2. The broth should be homogeneous, without lumps, approximately like potato jelly. Cool it to a temperature of 40°-45°.
3. Pour the potato mixture (decoction) into a deep cup. Add yeast, salt, sugar, sugar can be reduced, but at least 1 tablespoon must be added. Pour in 3/4 cup of vegetable oil. Mix everything and add a couple of glasses of flour.
4. Stir until you get a homogeneous mass without lumps. The consistency of the mass is approximately like that of pancakes. Cover the dough with a lid and leave for 20-30 minutes at room temperature for the yeast to activate.
By the way, our dough is lean, but very tasty. There are no animal fats, no eggs, no milk, so those who fast or for other reasons do not consume animal fats can safely eat these pies. Well, maybe just remove the butter from the filling recipe.
5. 20 minutes have passed, our dough has risen. Pour another 1/4 cup of vegetable oil and add flour in parts so that you can knead the dough. Knead the dough until it can be kneaded with a spatula, adding flour little by little.

6. As soon as the dough becomes very thick, put it on the table, previously sprinkled with flour. It is still a little liquid, so we collect it and knead it, but do not add too much flour. Knead until the dough stops sticking to your hands.
7. The dough is ready. Grease the inside of a deep cup with a little vegetable oil so that the dough does not stick and place the dough there. Cover the dough with a lid or film and leave to rise until the dough doubles in size.
You already guessed that the main feature of this dough is that it is made with potato broth, instead of eggs, milk, and sour cream. Potato broth makes the dough airy, light, and not stale.

1. Place the frying pan on the stove, pour in a little vegetable oil and heat it up. Cut off the white part of the green onions. Finely chop it and fry it in a frying pan until it becomes softer, literally 1 minute.
2. During this time, also finely chop the green part of the onion and send it to the frying pan. stir and remove from heat after 10-12 seconds. I didn’t make a mistake, after 10-12 seconds.
3. Grate the eggs on a coarse grater. Place the onion from the frying pan into a cup and add the eggs there. Salt and pepper.
4. Be sure to try the filling at this point. Add if anything is needed.

Making the second filling
5. We make the second filling from herbs and cheese. Finely chop all the greens and add some salt. Stir and shake with your hands a little to release a little juice.
6. Grate the cheese on a fine grater and add to the greens. Mix everything well with your hands. We are trying to make the mass more homogeneous to make it more convenient to wrap.

Making grease for pita bread
7. Take a small cup, break 2 eggs into it, pour in milk, add a pinch of salt and shake well with a fork until smooth.
8. Take the pita bread and cut it with scissors into squares, approximately 15 cm by 15 cm.
9. Turn on the oven at 180°
10. Place the filling on a square of pita bread. If you like it thicker, add more filling. We coat the pita bread with the egg-milk mixture around the filling so that the pita bread is soft and sticks to each other.
11. We begin to wrap. We wrap a corner on one side and a corner on the opposite side.
12. Then we fill the two remaining corners in the same way as the first. The result was an envelope like this.
13. Place the envelopes on a baking sheet. Grease each envelope with a mixture of eggs and milk on top. You can sprinkle with sesame seeds.
14. Our oven is already preheated to 180°, we send our envelopes there for 10-15 minutes. Just so they brown a little.
15. They were browned after 9 minutes. So watch them. They can be ready in less than 10 minutes. It all depends on the stove, the thickness of the pies, and the filling.
16. If you don’t eat them all at once, it’s better to place the pies on a wire rack so that they don’t sweat.

Today we are baking amazing pies with green onions and eggs: just like grandma’s. The pies turn out very tasty, soft and airy. Lots of filling, just the way I like it, and quick yeast dough - it’s ready in a few minutes (and even without eggs)! Pies with green onions and eggs: the recipe couldn't be easier. Ingredients:
- wheat flour - 4 cups;
- butter (margarine) - 180 grams;
- dry yeast - 10 grams;
- salt - 1 teaspoon;
- sugar - 1 tablespoon;
- milk (water) - 1 glass;
- boiled eggs - 6 pieces;
- green onions - 1 bunch;
- salt - to taste;
- pepper - to taste;
- vegetable oil - 2 tablespoons;
- egg - 1 piece (for greasing pies).

- To start making pies with green onions and eggs, you need to prepare the ingredients. To work with yeast dough, you must use products at room temperature.
- First melt the butter over low heat and let cool to room temperature.
- Only the milk will need to be heated to a temperature of 36-38 degrees - this is a comfortable temperature for the yeast to work. By the way, you can prepare baked pies with green onions and eggs using kefir. It will be delicious too.
- The dough kneads very quickly. In a bowl, mix milk with dry yeast (you can use fresh yeast - 25 grams), add sugar. Stir well, trying to dissolve the sugar and yeast.
- Next, pour in the melted and cooled butter or margarine. Mix again until evenly distributed.
- The next step is to add the sifted flour: in small portions, mixing thoroughly.
- When the dough becomes thicker, you can knead it with your hands on a floured table. For convenience, we also sprinkle the dough on top. The dough should end up soft and elastic. Now it doesn’t stick to the table or hands at all.
- Gather the dough into a ball, cover or wrap in cling film. Let him rest for twenty minutes. The gluten will swell, the dough will become more homogeneous and rise slightly during this time.
- Prepare the filling while the dough rests. It can be anything, but it’s better not raw: this way the pie will cook faster. Today I'm using a spring filling: green onions with boiled eggs.
- Boiled eggs should be cut into cubes. You need to boil them in salted water for about five minutes, hard-boiled.
- Let's cut the green onion, not too large. The proportions of onions and eggs can be different: you can take more or less of something.
- Mix everything and add salt to taste. You can add ground black pepper for flavor. Pour in vegetable oil: this way the filling will not turn out dry. Mix and the filling is ready.
- Take the dough: you don’t need to knead it. This is a very quick yeast dough that does not require long processing and proofing! Divide into equal pieces so that the pies are the same size.
- You don't need any flour or a knife for cutting. I tear off the dough with my hands: it doesn’t stick and it’s very convenient to work with.
- Roll the pieces into balls. We take one, pressing with our fingers, forming an even circle - a flat cake. In the middle of which we put the filling.
- We pinch the edges, forming an even and beautiful pie. By the way, it is allowed to give it any shape. Let's make a small classic pie.
- We will cook pies with eggs and onions in the oven, but you can, of course, fry them in vegetable oil. Place the prepared pies on a baking sheet lined with baking paper. You can simply grease the sheet with oil. Be sure to leave space between the pies: they will grow in size. Place the pies seam side down.
- Lubricate the pie with egg and onion on top: using a brush and one chicken egg, which we first beat with a fork.
- Bake in the oven at 200 degrees for 20-25 minutes until the top is golden brown and delicious. The oven must first be preheated to the desired temperature.
